Easy Baked Sirloin for Two
I don’t always enjoy going out to eat when the restaurants are jam packed with other revelers, especially on days like Valentine’s Day or Mother’s Day. This is mainly because what is supposed to be a relaxing and fun time becomes chaotic and stressful.
So, I’m a great one to advocate simply staying at home and making your own special holiday magic for your loved one(s).
Of course, you don’t have to make one recipe from every category I mention below to have a successful Valentine’s Day. But this will give you plenty of ideas to pick and choose from.
Let’s start with beautiful and delicious cocktails!
The Love Martini says it all
Enjoy relaxing on the couch with one of these beautiful cocktails in your hand while you look longingly in your love’s eyes. This martini is delicious and easy to make. There are only three ingredients – coconut rum, peach schnapps and cranberry juice.

Bacon Wrapped Scallops
These scallops are one of my most sought after appetizers. They are marinated, wrapped in bacon and cooked to perfection. They keep well in the fridge so you don’t have to eat them all in one day. But you may want to. You have been warned. 🙂

Chicken Saltimbocca
Chicken saltimbocca is perfect for Valentine’s Day because not only is this dish delicious with its butter tarragon sauce but it looks elegant and impressive. And who doesn’t like eating little chicken roll ups filled with prosciutto and cheese?
Roasted Boneless Leg of Lamb
Nothing says “I love you” like a leg o’ lamb. Okay, maybe some chocolates and flowers say it better, but this leg of lamb – one of my most popular posts – is fabulously delicious and will grace you with enough leftovers to make even more recipes.
