Beef Chile con Queso
Beef chile con queso is a cheesy and spicy appetizer perfect for any occasion. This delicious dish consists of beef, chiles, onions, garlic, and cheese melted together to create a savory dip. Whether served as an appetizer for your next party or enjoyed with tortilla chips on the side, beef chile con queso is sure to be a hit!
Would you look at that string of cheese? One of the things I love about this dip is that when you stick your chip in it and scoop, you get a real mouthful. There is just the right amount of beef to this cheesy and delicious dip.

- Use grass-fed beef as it truly has a superb taste. Once you go grass-fed, you’ll never go back.
- Mexican cheese is a mixture of cheddar cheese, queso quesadilla cheese, Monterey jack cheese, and Asadero cheese.
- Velveeta is a brand of processed cheese that is like American cheese. If you can’t find it, you can substitute a mild cheddar.
- Don’t be in a hurry for the cheese to melt, you don’t want to burn it.
- I like to dip various things into the chile con queso, not just chips. I cut up a flour tortilla and sometimes I dip fresh-cut veggies.
- Want extra spice? Add a teaspoon of chili powder. I couldn’t because hubby can’t take the heat.
How to make beef chile con queso dip
Pre-step
Get a large skillet or sauté pan.
Step one
Gather the ingredients – grass-fed ground beef, purple onion, green chilis, Velveeta cheese, Mexican cheese, cumin, salt, and pepper. (A)
Step two
Mince a quarter of the purple onion.
Step three
Heat a sauté pan on medium-high heat and add olive oil. Once that heats up (shimmers), add the onion and sauté for 3 minutes.
Step four
Add the beef, cumin, salt, and pepper (and chili powder if you like spicy). Break up the meat into little pieces as it cooks with a metal spatula. Sauté beef for 5 minutes. (B)
Step five
Transfer the beef to a bowl and set aside.
Add Mexican cheese, Velveeta, and half a can of green chilis into the pan. Lower the heat to medium-low and stand there stirring the cheese as it melts. (C)
Spoon some beef and some pico de gallo or diced tomatoes on top of the queso. (D)
Step nine
Stir it all up and transfer the beef queso into a bowl.
Gather some chips, cut up a flour tortilla, pico de gallo, and guacamole.
Step ten
Garnish the top of the chile con queso with some more pico de gallo.
I take a chip and dip it in the cheesy goodness.

Ingredients
Meat Mixture
- 1 tablespoon olive oil
- 1/4 purple onion diced
- 1/2 pound grass fed beef
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
- dash of pepper
Cheese Mixture
- 8 ounces Velveeta cut into chunks
- 12 ounces Mexican cheese
- 2 ounces green chilis (1/2 can)
Extras
- Pico de gallo
- Tortilla chips
- Guacamole
Instructions
Meat Mixture
- Heat a sauté pan on medium, add olive oil.
- Add onion and sauté for 3 minutes
- Add beef and sauté for 5 minutes, breaking it up in smaller pieces as it cooks
- Transfer beef into a bowl and set aside
- Lower heat under pan and add the two cheeses and the chili peppers
- Stand there and stir the cheese mixture as it melts
- Add as much as the beef as you like and spoon some pico de gallo on top
- Stir mixture together
- Spoon it into the bowl and spoon some more pico de gallo on top
- Dip a chip
- Eat the beefy cheese covered chip
- Sigh
- Smile
- Enjoy

My goodness this looks amazing! There is a mexican spot near here with a dish called queso fundido – its just melted cheese with mushrooms, and i’m totally addicted. Anything stringy, i’m done. So good. Can’t wait to try this!

I had never even heard of queso until a few years ago. We live in a bit of a culinary black hole. I went to a conference with some foodie friends and we had dinner at one of Rick Bayless’s restaurants. The gals ordered queso and I was all “that sounds weird”. One bite in and I was hooked. We had to order a second one because I could not stop eating it. Ha! Now I make it all the time.
