This delicious and cheesy beef chile con queso recipe is one of my favorites. So cheesy yet with a nice amount of beef that it makes for a perfect dip for your chips!

Would you look at that string of cheese? One of the things I love about this dip is that when you stick your chip in it and scoop, you get a real mouthful. There is just the right amount of beef to this cheesy and delicious dip.
I love dips, especially a warm crab dip and a cheese chile con queso.

Helpful tips
- Use grass-fed beef as it truly has a superb taste. Once you go grass-fed, you’ll never go back.
- Don’t be in a hurry for the cheese to melt, you don’t want to burn the cheese.
- I like to dip various things into the chile con queso, not just chips. I cut up a flour tortilla and sometimes I dip fresh cut veggies.
How to make queso dip
Step one
Gather the ingredients – grass fed beef, purple onion, green chilis, Velveeta cheese, cumin, salt and pepper. (A)
Step two
Mince a quarter of the purple onion.
Step three
Heat a sauté pan on medium and add olive oil. Once that heats up, add the onion and sauté for 3 minutes.
Step four
Add the beef, cumin, salt and pepper. Break up the meat into little pieces as it cooks with a metal spatula. Sauté beef for 5 minutes. (B)
Step five
Transfer the beef to a bowl and set aside.
Add the Mexican cheese, Velveeta and half a can of green chilis into the pan. Lower the heat to medium low and stand there stirring the cheese as it melts. (C)
Spoon some beef and some of the pico de gallo on top of the queso. (D)
Step nine
Stir it all up and transfer the cheese mixture into a bowl.
Gather some chips, cut up a flour tortilla, and take out the pico de gallo and guacamole.
Step ten
Garnish the top of the chile con queso with some more pico de gallo.
I take a chip and dip it in the cheesy goodness.

My goodness this looks amazing! There is a mexican spot near here with a dish called queso fundido – its just melted cheese with mushrooms, and i’m totally addicted. Anything stringy, i’m done. So good. Can’t wait to try this!
Elaine
Yes, Erin!! Queso fundido is the dish I refer to that I used to eat. Yes, totally addicting!
Karthika
Looks good! Can I replace beef with other meat ?
Elaine
Oh, yes you can Karthika! I can’t imagine what wouldn’t benefit from being enveloped in cheese.
Anjali
queso is something i could eat all day!
Elaine
Me too Anjali! But my thighs thank me when I don’t. 😉
Marie | Yay! For Food
This is definitely the dip for me! Basically you had me at (melted) cheese and beef. I just want to reach into my laptop screen, grab a tortilla chip, and take a big scoop of the queso! Definitely saving this recipe to make later!
Elaine
Thanks Marie. Another kindred spirit!

This looks absolutely amazing. Nothing beats a meat-filled queso.
I had never even heard of queso until a few years ago. We live in a bit of a culinary black hole. I went to a conference with some foodie friends and we had dinner at one of Rick Bayless’s restaurants. The gals ordered queso and I was all “that sounds weird”. One bite in and I was hooked. We had to order a second one because I could not stop eating it. Ha! Now I make it all the time.
Elaine
Woohoo Kim! I like the ‘culinary black hole’. hehe
Veronika
Looks very delicious and quite easy to make! Will definitely make it too!
Elaine
Thank you Veronika! I appreciate it!
Beth
You’re killing me here! Where’s the biggest spoon you own? Just shovel it in with that! I could probably do this in an IV drip, if given the chance!! Wonderful!
Elaine
You are so funny Beth!!
Gabby | The Tolerant Table
Oh my gosh that looks amazing! I have never heard of Velveeta but I’ll be looking into it! I wonder if we can get that here? Hope so!
Elaine
Gabby, it’s ooey, gooey and sinful. 😉
Crafty Cooking Mama
This looks delicious – I LOVE chile con queso! I would devour a whole bowl of that ♥
Elaine
Amanda, alas, I could too! That’s why I always make it when I have company so I won’t eat it all!
Lisa-Tiny Kitchen Capers
Oh. My. Goodness! Just look at all that gooey cheese. Forget the chips, I’m getting a spoon!
Elaine
I’m with you Lisa!
