Hide the scale! This is my toasted marshmallow chocolate chip skillet cookie recipe!
Talk about yummy! This chocolate chip skillet cookie is incredibly delicious and super easy to make. I know that skillet cookies have been a craze lately, but I ate my first one years ago. I only started making them recently.
Do I remember the restaurant where I got this delectable dessert? No. I only remember it was a chain restaurant. I saw it on the menu and planned my meal around getting that cookie into my belly. By that I mean, I knew when I ordered (and I got a burger smothered in onions and mushrooms – yes, I always remember what I order – it’s a curse), I would be taking at least half of my dinner home.
The waiter brought my chocolate chip skillet cookie in a cute little skillet with a scoop of ice cream plopped on top. I hastily scraped the ice cream off my cookie and on to a little plate because I don’t like to mix the two. I never really liked ice cream on my cake either, even as a child.
My tastes are strange like that. Did I eat the ice cream? Yes. But only after I ate the cookie.

How to make the Chocolate Chip Skillet Cookie
Preheat the oven to 350 degrees Fahrenheit.
I grab my stand mixer and put some brown sugar, white sugar and room temperature butter into it. I cream together those ingredients and after they’re nice and creamy, I add an egg and some vanilla and I mix them again until they’re all incorporated.
I gather some spelt flour, baking powder and salt.
I add them to the mixer and mix away. I didn’t take a photo of the batter because we’ve all seen cookie dough and I was excited to take out my dark chocolate chips and marshmallows.
I take my spatula and hand mix the chocolate chips and marshmallows into the dough.
I grease the 10 inch skillet very well and press the batter into it.
I’m giggling like a maniac looking at that photo.
Into the oven goes the skillet cookie.
I set it for 20 minutes. You can always add more time if you need to, but you don’t want to overcook your cookie!
That should be a bumpersticker! “Don’t overcook your cookie!”
I grab my pot holder and take that delicious dessert out.

I scream at Christopher to grab a tablespoon. He blinks a few times and runs to the kitchen.
I scoop the spoon into the toasted marshmallow chocolate chip skillet cookie and once I have a good amount on the spoon, I thrust it into Christopher’s hand.
I snap some photos.
I am so excited, I can barely speak. I take the spoon from him, smile at him before I shove it in my mouth and swoon.
WAIT, I can barely see the deliciousness.
I asked Christopher to get the crumbs out of there so I could get a better view.
He popped them in his mouth and smiled a chocolately smile.

This chocolate chip skillet cookie is sinfully delicious!
- 1/2 cup butter room temperature
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1 1/2 teaspoons vanilla
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup bittersweet chocolate chips
- 3/4 cup mini marshmallows
- Preheat oven to 350 F
- In a stand mixer, add butter and sugars, mix until creamy
- Add egg and vanilla, mix until combined
- Add flour, baking powder and salt and mix until it forms dough
- Add chocolate chips and marshmallows and mix by hand with a rubber spatula
- Grease 10 inch skillet and press dough in it
- Place in oven and bake for 20 minutes, you may find yours needs longer.
- Check with cake tester
- Bring to table
- Pass out spoons
- Dig in
