Medium Rare Sirloin Filets
These medium rare sirloin filets are juicy, tender, and dripping with flavor. Marinated in Worcestershire sauce and a delicious blend of spices, then oven-roasted to perfection, this sirloin steak recipe promises to be the star of the show.
I started cooking steak in the oven because we didn’t have a gas grill. I love steak and wanted to eat it without cooking it on the stove top. So I came up with this easy and no-fail way of having perfectly cooked steak.
Do I miss the sear on the steak? Absolutely not, because the flavor of this steak is outstanding and it comes out medium rare every single time.

Does grass fed beef taste different?
Yes. If I made this exact dish with one grass fed steak and one regular steak and you tried them side by side, I believe you would taste the difference.
It is more expensive than conventional beef but it is so worth the extra expense. The cow is allowed to graze, is not given hormones and is raised more ‘naturally’ then non grass fed cows. You can taste the difference in the meat.

Helpful Tips
- Although I usually shy away from using plastic bags, I use a gallon zip lock bag to marinate these filets. This allows me to massage the sirloin, and it’s easy to flip around the steak so the marinade coats it efficiently.
- I usually add basil to the marinade, but oregano is also a great option.
- Place the sirloin into the bag, add all the marinade ingredients, and knead the steak through the bag.
- Cover a jelly roll pan with foil and place a wire rack on the pan for easy clean up.
- You will be baking the steak first at a low temperature. Then you need to remove the filets and raise the oven’s temperature, so you finish cooking the meat at a high heat.
- Once you raise the oven’s temperature, you have to wait for the oven to come to temperature before you put the steaks back in the oven.
How to make medium rare sirloin steak
Pre-step
Cover a jelly roll pan with foil and place a wire rack over it.
Step one
Gather the ingredients – grass-fed top sirloin steak, dried basil, garlic powder, salt, pepper, and Worcestershire sauce.
Step two
In a small mixing bowl, add the marinade ingredients (A), and whisk until combined. (B)
Step three
Take the steak out of the packaging and blot dry with a paper towel. (C)
Place the steaks in a gallon sized ziplock bag and add the marinade. Knead the steak through the bag and place on the counter for an hour. (D)
Knead the steak again after a half hour has gone by.
Step four
Before the hour is up, preheat oven to 285 degrees Fahrenheit.
Step five
Take the marinated steak out of the bag and place on the wire rack on the jelly roll pan. (E)
Step six
Place in the oven and bake for 20 minutes.
Step seven
Take the steak out of the oven and raise the temperature to 425 degrees F.
Step eight
Once the oven has come to temperature, place the sirloin steak back in and bake for 10 minutes. (F)
Step nine
Let the steak rest for 5 minutes before serving and cutting into it.
Do I use an instant-read thermometer to check the doneness? No, I have been doing this a while now and I know how to get my steak medium rare. But if you have a meat thermometer, by all means use it if it gives you more peace of mind. Your steak temperature should be between 130 – 135 degrees Fahrenheit.
Time to plate the steak with my roasted potatoes and some sautéed cabbage.
So juicy.

Medium Rare Sirloin Steak Filets
Ingredients
- 1.25 pounds sirloin steak filets 2 filets
- 1/4 cup Worcestershire sauce
- 2 teaspoon dried basil
- 1 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon pepper
Instructions
- Add the Worcestershire sauce, basil, garlic powder, salt and pepper to a small bowl and whisk until combined.1/4 cup Worcestershire sauce, 2 teaspoon dried basil, 1 1/2 teaspoon garlic powder, 1/4 teaspoon kosher salt, 1/8 teaspoon pepper
- Place steak filets in a gallon zip bag and add the marinade.1.25 pounds sirloin steak filets
- Shake bag to coat the steaks and knead them for a minute. Leave the steaks on the counter for an hour (you want them to be close to room temperature).
- Preheat oven to 285 F.
- Cover a jellyroll pan with foil and place a wire rack on it. Take sirloins out of bag and place them on the wire rack.
- Place pan in oven and cook for 20 minutes.
- Remove from oven, set oven for 425 F.
- Once oven is at that temperature, place steak back in and cook for 10 minutes. Remove and let rest for 5 minutes before you serve.
- Plate
- Eat
- Enjoy

If it weren’t for my husband, I probably could be vegetarian too. I am the same as you, chicken, shrimp no problem, but I have some trepidation when it comes to red meat, especially steak. I just don’t know how to cook it but your instructions sound super easy!

How long should it cook for a rare steak?
Hi Elizabeth! I would say follow the directions for the first part – 285F for 20 minutes and then pull it out and set the oven to 425 and once it comes to temperature, cook for 6-7 minutes instead of 10 – let rest for 5 minutes and then it will be rare. Hope this helps.
