Air Fryer Twice Baked Potatoes

These air fryer twice baked potatoes are loaded with mashed potatoes, butter, sour cream, cheese, bacon, and chives for the ultimate crowd pleaser. Serve them up as a side dish or game day snack and watch them steal the show!

Once, during a visit to my brother’s house, he made double baked potatoes. I was hooked. I couldn’t believe how creamy and delicious they were. And topped with cheese and bacon, how could they go wrong?

Now, we serve these potatoes to dinner party guests and at small holiday gatherings because if I didn’t limit my consumption, I’d be eating them every night for dinner. That’s how wonderful I think the flavor of these air fryer potatoes is.

Helpful tips

  • I’m using a Yukon gold potato in this air fryer twice baked potatoes recipe, but you can use Russet potatoes instead, if you prefer.
  • You could lessen the calorie count by using low fat sour cream and cheese, but I say: go for the full fat because you deserve that amazing flavor.
  • I use sour cream in this recipe but you could substitute with plain Greek yogurt instead.
  • You can bake your potatoes hours before or even the night before, but I prefer to bake the potato just before I make this recipe because the hot potato will help melt the ingredients. NOTE: I have not added the time it takes to bake the potato to the recipe, so you’ll need to add that hour to your overall cooking time.
  • You can cook the bacon prior to starting this recipe, whether it is a few hours before, right before, or even the day before. I usually cook it before I start the recipe.
  • When you scoop out the insides of the baked potato, make sure to leave enough behind to hold the skin together.
  • You can use a fork or spoon to mash the potato with the rest of the ingredients. I prefer a spoon because I like little chunks of potatoes in this dish; a fork will give you a smoother mash.
  • You can either use an air fryer with trays or one with an air fryer basket. I have both but I prefer using the basket type for this recipe.
  • There is no need to use salt because the bacon is salty, but if you simply must, use 1/8 teaspoon.
  • You can add freshly ground black pepper if you like, but hubby is sensitive so, alas, I can’t.
  • If indeed you have leftovers, you can store them in an airtight container in the refrigerator for up to a week. But you will lose some of the fresh taste to these delicious potatoes.

Ingredients

  • Baked potato – Yukon or Russet potato. You can bake the potato the night before, a few hours prior, or right before you make this recipe.
  • Sour cream – full fat or low fat if you prefer.
  • Butter – I like the real deal but you could substitute with margarine.
  • Garlic powder
  • Pre-cooked bacon – I use uncured, no nitrate bacon. Use 2 – 3 slices. I usually cook the bacon the morning I’m going to make this recipe. You can also cook the bacon right before you start the recipe.
  • Chives – chopped.
  • Shredded cheese – Mexican or cheddar cheese.

How to make air fryer twice baked potatoes

Pre-step

Get out your air fryer, bowl, spatula, and spoon or fork.

If you are going to bake the potato right before starting, do so now. Same thing with the bacon. Cook bacon until crispy, blot with a paper towel, let cool, crumble, and set aside.

Step one

Gather the ingredients – baked potato, bacon, sour cream, shredded cheese, and chives.

Step two

Place the butter in the glass bowl. (A)

Step four

Add garlic powder and a little more than half the cheese. (C)

Step five

Take a kitchen tablespoon and scoop the cooked potato flesh out of the skin, leaving behind a small amount still attached to the skin. (D)

Step six

Take the back of the spoon (or fork) and mash the potato with the rest of the ingredients. Dice the green onion and add to the potato mixture. (E)

Step seven

Add half the bacon to the potatoes (F) and mix.

Step eight

Preheat the air fryer oven to 400 degrees Fahrenheit. Set the timer for 12 minutes.

(On a side note, if you have the tray type of air fryer, take the trays out when preheating. The basket will stay in the air fryer as you preheat.)

Step nine

As the air fryer heats up, stuff the potato.

Hold one of the potato skins in your hand, take the spoon and scoop the potato mixture into the skin. Repeat with the second potato skin, making sure they are evenly stuffed.

Step ten

Sprinkle cheese on top of the bacon. Once the oven has finished preheating, take the basket out and place the potato halves in it. (H)

Step eleven

Replace the basket and air fry for 10 minutes, at which point you will have 2 minutes left on your timer. Check the potatoes now, and if the cheese is melted to your taste, you can take them out. Otherwise, let them continue to cook for the remaining time.

Remove the baked potatoes and plate them.

Ingredients

  • 1 Yukon gold potato – freshly baked (or russet potato – baked right before starting the recipe)
  • 1/8 cup sour cream (heaping)
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1/4 cup shredded cheese (Mexican or cheddar cheese – divided)
  • 2 teaspoon chives (diced)
  • 2 slices cooked bacon (crumbled and divided)

Instructions

  • You can use a pre-baked potato or bake it right before you start the recipe – if you are going to bake it before you start this recipe, do so now. It should take an hour more than stated in this recipe.
    1 Yukon gold potato – freshly baked
  • Preheat the air fryer at 400 F, and set the timer to 12 minutes.
  • In a mixing bowl, add the butter, sour cream, garlic powder, and most of the shredded cheese. (The rest you will sprinkle on top before air frying.
    1/8 cup sour cream, 2 tablespoons butter, 1 teaspoon garlic powder, 1/4 cup shredded cheese
  • Cut the baked potato in half. Take a kitchen tablespoon and scoop out the potato flesh and add it to the bowl. Make sure you don't scrape too close to the skin as you need some flesh to hold it together.
  • Add diced chives and most of the crumbled bacon. Use the back of the spoon to mash the potato and either mix it all together with the spoon or with a spatula.
    2 teaspoon chives, 2 slices cooked bacon
  • With the same tablespoon, scoop the potato mixture in both potato skins, making sure each half is stuffed evenly.
  • Sprinkle the rest of the bacon bits on top of the potatoes and then add the rest of the cheese.
  • Once the air fryer has come to temperature, remove the basket and add the potato halves. Check after 10 minutes to make sure the cheese isn't getting to 'done'.
  • Serve

Notes

I didn’t add the time it takes to cook the bacon or bake the potatoes. But if you want, you can make both the bacon and potatoes a few hours before or even the day before.
