Instructions
You can use a pre-baked potato or bake it right before you start the recipe - if you are going to bake it before you start this recipe, do so now. It should take an hour more than stated in this recipe.
1 Yukon gold potato - freshly baked
Preheat the air fryer at 400 F, and set the timer to 12 minutes.
In a mixing bowl, add the butter, sour cream, garlic powder, and most of the shredded cheese. (The rest you will sprinkle on top before air frying.
1/8 cup sour cream, 2 tablespoons butter, 1 teaspoon garlic powder, 1/4 cup shredded cheese
Cut the baked potato in half. Take a kitchen tablespoon and scoop out the potato flesh and add it to the bowl. Make sure you don't scrape too close to the skin as you need some flesh to hold it together.
Add diced chives and most of the crumbled bacon. Use the back of the spoon to mash the potato and either mix it all together with the spoon or with a spatula.
2 teaspoon chives, 2 slices cooked bacon
With the same tablespoon, scoop the potato mixture in both potato skins, making sure each half is stuffed evenly.
Sprinkle the rest of the bacon bits on top of the potatoes and then add the rest of the cheese.
Once the air fryer has come to temperature, remove the basket and add the potato halves. Check after 10 minutes to make sure the cheese isn't getting to 'done'.

Notes
I didn't add the time it takes to cook the bacon or bake the potatoes. But if you want, you can make both the bacon and potatoes a few hours before or even the day before.
