Luck of the Irish Cocktail
Commemorate St. Patrick’s Day in style with this vibrant and delicious luck of the Irish cocktail. This refreshing cocktail is made with Irish whiskey, peach schnapps, pineapple juice, lime juice, club soda, and a dash of green food coloring for visual effect.

I love this cocktail for a few different reasons, one being that it has Irish whiskey in it. But even if you aren’t a fan of whiskey, you will still enjoy this cocktail, mainly because the combination of the ingredients makes for a lip-smacking taste treat.
Even hubby, who isn’t a whiskey fan, liked it and would drink one happily if set in front of him. High praise indeed.
And don’t you think that this drink is perfect for Saint Patrick’s Day? But, here’s a secret: it’s fun year round. Ask me how I know.

Helpful tips
- Although regular whiskey would work with this luck of the Irish cocktail recipe, I encourage you to use an Irish whiskey if you can. There are many brands out there but my go-to is Jameson Irish whiskey.
- This cocktail is usually made with lime soda, but I’m not a fan of the preservatives or caffeine found in soda more often than not, so I use fresh lime juice and club soda.
- If you do use fresh lime juice, make sure to wash your lime before juicing it to remove pesticides. Here’s how: I use this cloth that has a coarse side and a smooth side. The coarse side is to scrub the skin and the smooth side is to shine the fruit. No need to shine citrus. Wet the cloth and briskly rub the skin with the coarse side, then rinse with cold water thoroughly.
- If you don’t have the cloth, here’s an alternative way of washing the citrus: squirt some natural, unscented hand soap in your palm and scrub the skin with your hands. Rinse the citrus thoroughly under cold water.
- I use double old fashioned glasses for this cocktail, but you can use highball glasses, rocks glasses, or Collins glasses.
- Unless I’m making a pitcher or punch bowl of this delightful cocktail, I use the small cans of pineapple juice instead of the large can so you can avoid wasting what’s left over.
- I generally garnish this lucky cocktail with cherries and a chunk of pineapple, but here are alternatives: a mint sprig, a wedge of lime, a thin lime wheel, or a wedge of pineapple.
How to make the luck of the Irish cocktail
Pre-step
Get out a cocktail shaker and fill it halfway with ice. Also get a measuring glass, 2 martini picks, and glassware.
Wash off two maraschino cherries, and cut two chunks of pineapple. Place a cherry and pineapple chunk on each martini pick.
After measuring out each ingredient, add them to the cocktail shaker. But do not add the club soda as it will fizz too much. You will top the cocktail off with the soda.
Step one
Gather the ingredients – Irish whiskey, peach schnapps, pineapple juice, lime, green food coloring, and club soda.

Step two
Measure 4 ounces of whiskey. (A)

Measure 2.5 ounces of peach schnapps. (B)

Step four
Measure 3 ounces of pineapple juice. (C)
Step five
Measure 1 ounce of fresh lime juice. (D)

Step six
Carefully squeeze out at least a drop of green food coloring. I used 2 drops in this cocktail. (E)
Step seven
Add fresh ice cubes to the glasses. Place the lid on the cocktail shaker and shake vigorously for 10 seconds. Pour, divide, and strain the liquid between the two glasses.
Step eight
I measured out the club soda water (F), but you will divide it between the two glasses. Leave a little room at the top for the garnish. Take a spoon and give it a careful stir.

Step nine
Add the garnish to each glass.

Ingredients
- 4 ounces Irish whiskey

- 6 ounces club soda (measurement is approximate as you're going to add directly to the glasses and not in the shaker)
Garnish
- 2 maraschino cherries (rinse the syrup off)
- 2 chunks pineapple (fresh)
Instructions
- Get a cocktail shaker and fill it halfway with ice. Get a measuring glass, martini picks and glassware.

- Add fresh ice to the glasses. Place the lid on the cocktail shaker and shake vigorously for 10 seconds. Pour, divide, and strain the liquid to each glass.
- Add club soda to each glass, leaving a small amount of room between the liquid and the top of the glass for the garnish.6 ounces club soda
- Add the garnish to each glass.
