Helpful tips
While regular whiskey will work, an Irish whiskey gives this cocktail its signature character. Jameson is my go-to, but use any Irish whiskey you enjoy.
This drink is often made with lime soda, but I prefer fresh lime juice and club soda to avoid preservatives and added caffeine.
If you’re using fresh lime juice, wash the lime before juicing to remove any residue. A produce cloth works well, use the coarse side to scrub the skin, then rinse thoroughly.
No produce cloth? A small amount of unscented, natural soap and a good rinse under cold water works just as well.
I like serving this cocktail in double old-fashioned glasses, but highball, rocks, or Collins glasses are all great options.
Unless you’re making a large batch, small cans of pineapple juice are ideal so nothing goes to waste.
I usually garnish with cherries and a chunk of pineapple, but a mint sprig, lime wedge, thin lime wheel, or pineapple wedge all make lovely alternatives.
