You’ll be chortling away while you stuff these lovely squares into your mouth. Crumbs will be flying, but you won’t care because they make you happy as only a great brownie can!
Years ago, people always wanted me to make brownies for parties or get togethers. Which I found really funny. Why so funny? Because I used a box brownie mix and added chocolate chips. That’s it.
People used to ask me what I did to make them so delicious and I’d tell them the truth and they’d say, “No, really, how did you make them…?” Sometimes the easiest answer is the one people don’t believe. Go figure.
So, why do I make from scratch brownies when the old way of making them was such a hit?
Because I can, peeps, because I can.
One of the things I have to tell you, dear readers, is that when I made these brownies for this post, I made them also for a layered brownie dessert recipe that I’ll be blogging about in the future. SO, I was thinking that I should cut the brownies on the big side. As it turns out, I could have cut them normally.
Well, let me tell you, I was laughing so hard carrying the plate of monster brownie to my photography table, that I couldn’t talk. Christopher was sitting at the dining room table and he kept asking, “What? What?”
It took me a few minutes to tell him that I was laughing at the honking slice of brownie. To give you an idea of how big it was, I baked the brownies in an 8 x 8 baking dish and cut them into 4 pieces. HUGE!
I’m chuckling just thinking about it now.

How to make from scratch brownies
I gather some flour, brown sugar, cocoa powder and salt.
I grab my large mixing bowl and put all but the sugar in it.
I want to talk about my mixing bowls. These bowls are one of my greatest Ebay purchases. I wanted to get shallow stainless steel bowls but didn’t want to pay an arm and a leg, so I searched on eBay and lordy, lordy, I found 6 bowls for under $50. It was from an estate sale and I took a chance on them and boy, I am glad I did because I use them all the time.

I preheat the oven to 350 degrees Fahrenheit.
After I put the dry ingredients in the bowl, I whisk it all together.
I grab a smaller mixing bowl and crack two eggs in it. I then add some vanilla.
I whisk them together.
Next up is the butter.
I get a small sauce pan and plop the butter in it. I melt the butter on medium/low heat. Once it is melted, in goes the sugar and ½ cup of the chocolate chips. I stir it as it heats waiting for the chips to melt which takes about 2 minutes.
Time to add the wet ingredients to the dry ingredients…
…and mix it with an awesome spatula. This is a recent purchase and oh my word, it is so useful. I love its shape and its stiffness. And it’s made by my favorite spatula company. Here it is if you want to see it: scraper spatula. (This is not an affiliate link.)
So, I use my spatula and gently blend the ingredients together.
Time to add the chocolate chips.
And now I mix the batter fully. Just make sure that you don’t over mix.
I grab my 8 x 8 baking pan and grease it.
In goes the batter.
I’m squealing in delight at this point and I feel a few chortles bubbling up, but I squash them because now is not the time.
It is time to pop it in the oven though. I bake it for 25 – 30 minutes until the tester comes out clean but with maybe a few brownie crumbs on it. I start checking at 25 minutes and add 1 minute at a time to make sure I don’t bake it too long.
Yahoo! All done and cooling on a trivet!
Once it is cooled, I cut it (into normal sized pieces so I don’t laugh myself silly.)

Best From Scratch Brownies
- 10 tablespoons butter melted
- ¾ cup sugar
- ½ cup bittersweet chocolate chips
- 2 eggs whisked
- 1 teaspoon vanilla
- ½ cup flour
- ¼ cup cocoa powder
- ½ teaspoon salt
- ½ cup bittersweet chocolate chips additional
- Preheat oven to 350 F
- Place butter in sauce pan and melt
- Add sugar and ½ cup chocolate chips and stir for 2 minutes or until chips melt
- In a medium mixing bowl, add eggs and vanilla and whisk to mix
- In a large mixing bowl add flour, cocoa powder and salt
- Whisk until mixed
- Add whisked eggs and vanilla to dry ingredients
- Add butter/sugar/chocolate mixture
- With a spatula, mix until just about mixed
- Add chocolate chips and continue mixing until just mixed (Do not over mix)
- Grease 8 x 8 baking dish
- Place batter in baking dish, spread it out evenly
- Pop in oven
- Bake for 25 – 30 min
- Allow to fully cool before cutting into brownies
- Cut a huge piece and laugh your head off
- Or cut a normal piece
- Wipe chocolate from lips
