Sauteed Beet Greens

This delicious and easy sauteed beet greens recipe will make you want to have them every week. Or at least when they are in season! Oh so good!

Oh yeah!  These are delicious and easy sauteed beet greens, that is for show-ah!  (Translation:  sure.)  I love how easy and awesome they are!

The beet is a great vegetable because you can eat the whole dang thing: the beet, the stem, the greens!!  They are filled with nutrients and I will name a few!

They have potassium, magnesium, fiber, vitamins A, B and C, phosphorus, beta carotene and folic acid.  They also help cleanse the blood.  And although they are high in sugar, their sugar is released slowly into your bloodstream.  So, this is a great, high energy vegetable.  There are more health benefits but that I won’t go into but don’t take my word for it; look them up.  Beets are nutritious!

These are the beets I bought for a few recipes.  So colorful and delicious looking.  I got two different colors of beets for the variety.  As you can see, the stems of the orange/yellow ones are yellow and the red beet stems are red.  🙂

Yes, I know, obvious!  But sometimes the obvious MUST be stated in order to BE obvious.

How to make easy sauteed beet greens

Time to cut off the tops!  I leave 2 – 3 inches of the stems for when I roast these babies!

Here are the greens all cut and preening for you!

I washed the beautiful leaves and stems and then cut them up into pieces.

The sautéing

Now it’s time to grab my cast iron wok and heat it on medium.

Once it has heated, I add some olive oil.

In go the beet greens.  They sauté very quickly!  They can take between 5 to 7 minutes.  I stand there and stir them every once in a while.

Five minutes into sautéing, I add a clove of crushed garlic and some salt.

Aren’t the yellow and red stems pretty together?

Time to put them all into a bowl and high-tail it to the table so I can eat some of these delicious greens!  One of the things I like to do is treat the beet greens like salad greens and dress them the way I would dress a salad.  Yum!

Like all other greens, you’ll notice they cook down a lot.

Sauteed Beet Greens

These delicious and nutritious beet greens are so easy to make! A great addition to any main dish!

Ingredients

  • 6 beet greens from 6 beets, washed and patted dry
  • 2 tablespoons olive oil
  • 1 clove garlic crushed
  • 1/2 teaspoon salt

Instructions

  • Heat a sauté pan or wok on medium
  • Add beet greens and stand over them and stir them while they sauté
  • After 5 minutes, add garlic and salt
  • Sauté for another 2 minutes
  • Beet greens should be darker in color and slightly limp
  • Place greens into serving bowl and run to the table
  • Plop on plate with main dish or use as salad greens
  • Eat
  • Get infused with all the nutrients
  • Enjoy
