Delicious Date Nut Bread

This moist hearty delicious date nut bread will satisfy your sweet tooth without being too sweet!

Ingredients

  • 2 cups dates chopped
  • 1/2 cup boiled water
  • 1/2 cup hot decaf coffee
  • 1/4 cup butter (softened)
  • 1 egg (room temperature)
  • 1 teaspoon vanilla
  • 2/3 cup brown sugar
  • 1 3/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup chopped walnuts

Instructions

  • Take out the butter and egg at least a half hour before starting the recipe.
  • Place dates in medium sized bowl, add butter and pour in boiling water and coffee and let it sit for 15 minutes - to soften and cool.

  • Preheat oven to 375 degrees F and grease a bread pan.
  • In a small bowl, assemble flour, salt, baking powder, and baking soda and set aside.

  • In another small bowl add the egg, vanilla and brown sugar and whisk until incorporated.

  • Pour the egg mixture over the date mixture and add the dry ingredients. Stir until just incorporated. Do not overmix.
  • Fold in the walnuts, again being careful not to overmix.

  • Pour into prepared loaf pan and bake for 45 - 50 minutes. Check doneness at 45 minutes with either a cake tester or toothpick. If there are a few crumbs or if it's clean, that means it's done.
  • Let cool for at least 10 minutes before removing from pan and transferring the bread to cool on a wire rack.
  • Slice, eat, and enjoy.

Helpful tips

  • Bring your egg and butter to room temperature before mixing for a smoother batter and better rise.
  • Remove the pits from the dates before chopping them up.
  • Ensure the dates are chopped evenly to distribute the sweetness throughout the bread.
  • We like to use walnuts in this bread, but pecans or cashews are a good choice.
  • Mix the batter until just combined to keep the bread tender. Overmixing can lead to a dense, tough loaf.
  • Insert a toothpick or cake tester into the center of the bread. If it comes out clean or with just a few crumbs, the bread is done. Overbaking can dry it out.
  • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack. This helps it set and makes it easier to slice.
  • Store the bread in an airtight container at room temperature for up to three days. You can also store it in the refrigerator for a week or freeze it for longer storage.
