Helpful tips
Always squeeze your fresh lime juice; don't use bottled lime juice if you can help it. I have found that even the good quality bottled lime still has a taste and doesn't beat freshly squeezed juice.
Make your own simple syrup not only because it is easy, but it's cost effective. Here's how: Add 1 cup of sugar to 1 cup of water and boil for 5 minutes, until the sugar has desolved. Cool thoroughly before adding to a cocktail. Pour the syrup in an airtight container and store in the refrigerator for up to 6 months.
You can use white rum instead of gold but I prefer the gold as it gives the cocktail a nice glowy look.
I use a citrus squeezer to extract the lime juice, but a citrus reamer also works, it just takes more arm strength.
