Baked Brie in Puff Pastry

  • 1 sheet puff pastry (defrosted - and rolled out)
  • 8 ounces brie wheel
  • 4 tablespoons prune spread (or any jam you like)
  • 3 tablespoons pecans (or any nut
  • 1 egg (plus 2 tablespoons milk for egg wash - this is optional)
  • 3 tablespoons maple syrup
  • 1 tablespoon pecans (optional topping)


  • Take puff pastry sheet out of freezer at least 40 minutes before starting. When puff pastry has defrosted, either take a rolling pin to smooth it out or leave as is.
  • Preheat oven to 375 F
  • Cover a small jelly roll pan with parchment paper
  • Lay puff pastry flat on the jelly roll pan
  • Unwrap wheel of brie and place it in the middle of the pastry
  • Slather jam on brie and sprinkle pecans on top
  • Pull ends of pastry up over the brie and seal it as best you can
  • For the egg wash, crack egg in bowl, add two tablespoons of milk and whisk until combined
  • Take a pastry brush and paint the egg on the pastry
  • Pop in the oven and bake for 25 - 30 minutes
  • Place brie on serving dish and sprinkle more pecans on top. Poor as much maple syrup as you like on the brie
  • Gather crackers or bread for the brie and cut the cheese in half
  • Eat
  • Smile
  • Enjoy


I didn't add the time it takes to defrost the puff pastry, which would add 40 minutes.
Helpful tips
  • Take the sheet of puff pastry out of the freezer around 40 minutes before you begin the recipe, so it can thaw.
  • At around 20 minutes, check the pastry to see if you can unfold it without breaking it and when it's ready, do so.
  • Use a rolling pin to roll out the pastry a little. This will make it slightly bigger and help get rid of the folds. (It doesn't always get rid of them, but it will smooth the dough out.)
  • Use an egg wash if you want the pastry to turn a shiny golden brown color. Without the egg wash, the finished pastry won't have that golden glow.
  • This recipe calls for pecans but use whichever nut you prefer or none at all.
