In a saucepan, on medium heat, bring cream and Guinness to a light boil.
400 ml cream, 100 ml Guinness Stout
Add chopped-up chocolate and zest of orange. Stir until the chocolate melted.
1 kg dark chocolate, 1 zest orange
Take pan off of the burner and let mixture cool.
Spoon the mixture into little muffin cups. (I've never been able to roll the mixture, but if you can, go for it.)
If you use muffin cups, sprinkle coconut on as many truffles as you like. I keep some plain.If you roll them, place them in coconut and roll them around until fully coated.
3 tablespoons Shredded coconut
Place in refrigerator for 1 - 2 hours to set the chocolate.
Eat, smile, and enjoy.

I didn't include the 1 hour it takes to firm up in the fridge.
Helpful tips
I've been making these truffles for a few years now, but I have never been able to roll them in balls like the recipe says. Instead, I always fill little muffin cups with the truffle batter.
Besides coconut, you can roll your truffles in cocoa powder, crushed nuts, or even powdered sugar for different textures and flavors.
Store your Guinness chocolate truffles in an airtight container in the refrigerator. They can also be frozen for longer storage. Just be sure to let them thaw in the fridge before serving.
