Place steak filets in a gallon zip bag and add the marinade.
1.25 pounds sirloin steak filets
Shake bag to coat the steaks and knead them for a minute. Leave the steaks on the counter for an hour (you want them to be close to room temperature).
Preheat oven to 285 F.
Cover a jellyroll pan with foil and place a wire rack on it. Take sirloins out of bag and place them on the wire rack.
Place pan in oven and cook for 20 minutes.
Remove from oven, set oven for 425 F.
Once oven is at that temperature, place steak back in and cook for 10 minutes. Remove and let rest for 5 minutes before you serve.

Although I usually shy away from using plastic bags, I use a gallon zip lock bag to marinate these filets. This allows me to massage the sirloin, and it's easy to flip around the steak so the marinade coats it efficiently.
I usually add basil to the marinade, but oregano is also a great option.
Place the sirloin into the bag, add all the marinade ingredients, and knead the steak through the bag.
Cover a jelly roll pan with foil and place a wire rack on the pan for easy clean up.
You will be baking the steak first at a low temperature. Then you need to remove the filets and raise the oven's temperature, so you finish cooking the meat at a high heat.
Once you raise the oven's temperature, you have to wait for the oven to come to temperature before you put the steaks back in the oven.
