Satisfying Cinnamon Bread

A delicious cinnamon bread that goes well for breakfast with some hot beverage! The perfect amount of sweetness makes this bread a standout.

Ingredients

  • 2 cups spelt flour (or flour of choice)
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon salt
  • 1 cup buttermilk (see helpful tips on how to make it yourself)
  • 2 eggs
  • 1/4 cup oil
  • 1 1/2 teaspoon vanilla

Topping

  • 1/4 cup brown sugar
  • 2 teaspoon cinnamon
  • 3 tablespoons butter (softened)

Instructions

  • Take butter out prior to starting the recipe. Preheat oven 350 F and grease a bread pan liberally.
  • In a mixing bowl add flour, sugar, baking soda, cinnamon and salt. Mix until combined.
  • Make the buttermilk or use store bought. (See helpful tips below). In another mixing bowl add buttermilk, eggs, oil and vanilla. Whisk until combined.
  • Pour the wet ingredients into the dry ingredient bowl and mix with a spatula.
  • Pour batter into bread pan.

Make topping

  • In a small mixing bowl, combine 1/4 cup brown sugar, 2 teaspoons cinnamon and butter.
  • Use your pastry cutter to make the topping into crumbles.
  • Sprinkle topping on top of the batter and bake for 45 - 50 minutes. Check after 45 minutes.
  • Wait 10 minutes before removing bread from pan and placing it on a wire rack to cool.
  • Cut with sharp serrated knife and plate a few pieces.

Notes

Helpful tips
  • I like to make buttermilk instead of buying it from the store. In this recipe, I use a powdered mix but here's another way to make it.
  • How to make buttermilk at home - In a cup measuring glass, pour a tablespoon of either lemon juice or white vinegar into it. Add milk up to the measuring line that denotes a cup. Stir and let the milk sit for 5 minutes. It will curdle slightly because of the acid.
  • I let the bread cool fully on the wire rack before cutting it as it is easier, but if you want to cut it when it's still warm, use a serrated knife and know that it might tear or crumble.
  • Don't skip the cinnamon topping. Here's the fun part, the topping doesn't stay on the top. It will sink into the bread and cause a slight swirl.
