Satisfying Cinnamon Bread

A delicious cinnamon bread that goes well for breakfast with some hot beverage!

Ingredients

  • 2 cups spelt flour or flour of choice
  • ¾ cup sugar
  • 1 teaspoon baking soda
  • 1 ½ teaspoons cinnamon
  • ¾ teaspoon salt
  • 1 cup buttermilk
  • 2 eggs
  • ¼ cup oil
  • 1 ½ teaspoon vanilla

Topping

  • ¼ cup brown sugar
  • 2 teaspoon cinnamon
  • 3 tablespoons butter

      Instructions

      • Preheat oven 350 F
      • Grease a bread pan liberally
      • In a mixing bowl add flour, sugar, baking soda, cinnamon and salt. Mix until combined
      • In another mixing bowl add buttermilk, eggs, oil and vanilla. Whisk until combined
      • Pour the wet ingredients into the dry ingredient bowl and mix with a spatula
      • Pour batter into bread pan

      Make topping

      • In a small mixing bowl, combine ¼ cup brown sugar, 2 teaspoons cinnamon and butter
      • Use your dough cutter to make the topping into crumbles
      • Pour topping on top of the batter
      • Bake for 45 - 50 minutes
      • Wait 5 minutes before removing bread from pan
      • Place on wire rack
      • Cut with sharp serrated knife
      • Plate a few pieces
      • Eat
