Great Guinness Chocolate Mousse

This Guinness chocolate mousse is light, fluffy, and delectably creamy for the best boozy dessert. Inspired by a recipe I fell in love with in Dublin, this 15-minute mousse recipe is the perfect way to impress your friends at your next dinner party.

Ingredients

  • 5 eggs (separated)
  • 3/4 cup chocolate chips I used Ghirardelli 60% cocoa chips
  • 2 tablespoons butter
  • 1 3/4 ounces fine sugar
  • 1 3/4 ounces Guinness stout

Instructions

  • Melt chocolate and butter in a double boiler or microwave.

  • Once it is melted, add Guinness and stir until incorporated.

  • In a stand mixer, beat egg yolks with sugar until creamy.
    5 eggs, 1 3/4 ounces fine sugar
  • Mix the egg yolk mixture with the melted chocolate.
  • In a stand mixer, beat egg whites until they form stiff peaks.

  • Fold egg whites in with the chocolate mixture.
  • Pour and divide the mousse between the 3 glass containers.
  • Cover with plastic wrap and place in the refrigerator for at least 2 hours.
  • Eat

Notes

I didn't add the time you need to have it get cold in the fridge. Add 2 hours for that!
Helpful tips
  • Although I don't add whipped cream on top of the mousse when I serve it, feel free to add a dollop on top. You can also shave some chocolate on top of the whipped cream for a touch of color.
  • I use 60% cocao Ghirardelli chips but you can use semisweet chocolate chips instead.
  • If you don't have a double boiler, you can add an inch or two of water to a small saucepan, heat it on medium heat and place a glass bowl on top. Add the chocolate and butter and stir until melted. You can also use a microwave to melt the chocolate and butter.
