Classic Daiquiri Cocktail

Ingredients

  • 4 ounces rum light or gold
  • 2 ounces lime juice freshly squeezed
  • 1 ounce simple syrup or more if you prefer sweeter, but try this first

Garnish

  • 4 lime wheels thinly sliced

Instructions

  • Fill a cocktail shaker 1/2 way with ice and add rum, lime juice, and simple syrup
    4 ounces rum, 2 ounces lime juice, 1 ounce simple syrup
  • Cap shaker and shake for 30 seconds
  • Strain into martini glasses and float the lime wheels
    4 lime wheels

Notes

Helpful tips

    • Always squeeze your fresh lime juice; don't use bottled lime juice if you can help it. I have found that even the good quality bottled lime still has a taste and doesn't beat freshly squeezed juice.
    • Make your own simple syrup not only because it is easy, but it's cost effective. Here's how: Add 1 cup of sugar to 1 cup of water and boil for 5 minutes, until the sugar has desolved. Cool thoroughly before adding to a cocktail. Pour the syrup in an airtight container and store in the refrigerator for up to 6 months.
    • You can use white rum instead of gold but I prefer the gold as it gives the cocktail a nice glowy look.
    • I use a citrus squeezer to extract the lime juice, but a citrus reamer also works, it just takes more arm strength.
