Oatmeal Raisin Cookies

Ingredients

Beginning Ingredients

  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 3/4 cup butter softened
  • 2 eggs
  • 1 teaspoon vanilla

Dry Ingredients

  • 2 cups spelt flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Stirred in

  • 2 cup oatmeal
  • 1 cup shredded coconut
  • 1 cup raisins
  • 1 cup walnuts

Instructions

  • Preheat oven to 350 F
  • In a mixer, add butter and sugars. Mix until combined
  • Add eggs and vanilla and mix until combined
  • Add flour, baking powder, baking soda and salt and mix until combined
  • Stir in oats, coconut, raisins and nuts
  • Grab a medium ball of dough and roll into a ball. Place each ball on a few cookie sheets
  • Place one of the sheets in the oven and bake for 15 minutes or until they are done
  • Let the cookies cool for 5 minutes before removing them from the cookie sheet
  • Bag cookies up or serve some immediately with a nice big glass of milk or tea
  • Bite into a cookie
