Take out one sheet of puff pastry, leave on the counter for 30 - 40 minutes until thawed
Line parchment paper on a jelly roll pan
Preheat oven to 400 F
Line the puff pastry with the peach slices and sprinkle the cherry halves on top of the peaches
Bake for 15 - 18 minutes
Sprinkle the top with confectioner's sugar
Slice into squares
Eat one square
Share with husband

I did not add the time it takes to thaw the puff pastry which is 40 minutes.Helpful tips
There are a few ways to pit cherries but I prefer to use a gadget as it makes it so easy. Just make sure you wear an apron to protect your clothes since cherry juice can stain.
You need to take out the puff pastry at least 40 minutes before you start the recipe so it can thaw. The pastry will be folded in thirds. I set a timer for 20 minutes and then open the pastry and place it on the jelly roll pan.
Wash the fruit before you use them. Here's how to wash the peaches: squirt some unscented, natural soap and rub the peaches with the soap. Then use a vegetable brush to scrub the skin. Run the fruit under cold water to remove all the soap. (I use the 365 brand from Whole Foods. It's a foaming hand soap)
Here's how to wash cherries: Place them in a strainer and run water over them. Squirt some natural soap in your hands and pick up the cherries in handfuls and rub them with the soap until all the cherries have been washed. Run cold water over them until the soap has all been rinsed off.
