Delicious Date Nut Bread

This moist hearty delicious date nut bread will satisfy your sweet tooth without being too sweet!

Ingredients

  • 2 cups dates chopped
  • 1/4 cup butter
  • 1/2 cup boiled water
  • 1/2 cup hot decaf coffee
  • 1 egg
  • 1 teaspoon vanilla
  • 2/3 cup brown sugar
  • 1 3/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup chopped walnuts

Instructions

  • Place dates in medium sized bowl, add butter and pour in boiling water and coffee and let it sit for 15 minutes - to soften and cool
  • Preheat oven to 375 degrees F and grease a bread pan
  • In a small bowl, assemble flour, salt, baking powder and baking soda and set aside
  • In another small bowl add the egg, vanilla and brown sugar and whisk until incorporated
  • Pour the egg mixture over the date mixture and add the dry ingredients. Stir until just incorporated. Do not over mix
  • Fold in the walnuts, again being careful not to over mix
  • Pour into prepared loaf pan and bake for 45 - 50 minutes
  • Let cool for at least 10 minutes before removing from pan and transferring the bread to cool on a wire rack
  • Slice
