Delicious Date Nut Bread
This moist hearty delicious date nut bread will satisfy your sweet tooth without being too sweet!

- 2 cups dates chopped
- 1/4 cup butter
- 1/2 cup boiled water
- 1/2 cup hot decaf coffee
- 1 egg
- 1 teaspoon vanilla
- 2/3 cup brown sugar
- 1 3/4 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 cup chopped walnuts
Place dates in medium sized bowl, add butter and pour in boiling water and coffee and let it sit for 15 minutes - to soften and cool
Preheat oven to 375 degrees F and grease a bread pan
In a small bowl, assemble flour, salt, baking powder and baking soda and set aside
In another small bowl add the egg, vanilla and brown sugar and whisk until incorporated
Pour the egg mixture over the date mixture and add the dry ingredients. Stir until just incorporated. Do not over mix
Fold in the walnuts, again being careful not to over mix
Pour into prepared loaf pan and bake for 45 - 50 minutes
Let cool for at least 10 minutes before removing from pan and transferring the bread to cool on a wire rack
