Ingredients

  • 3 tablespoons olive oil
  • 3 tablespoons flour
  • 28 ounces diced tomatoes
  • 2.5 tablespoons chili powder
  • 2 teaspoons dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 2 cloves garlic crushed
  • 4 ounce green chiles
  • 1/2 cup water (optional for thinning chunky sauce)

Instructions

  • Heat heavy saucepan on medium heat
  • Add oil and heat for 1 minute
  • Add flour, whisk for 1 to 2 minutes
  • Add can of diced tomatoes
  • Stir
  • Add chili powder, oregano, cumin, onion powder, garlic powder, salt and crushed garlic
  • Stir
  • Bring to boil
  • Add green chiles
  • Lower heat to low and simmer for 15 minutes
  • Revel in its chunkiness
  • Top on enchiladas
  • Serve
  • Enjoy
