Tasty Thai Peanut Sauce

This delicious and slightly spicy peanut sauce is so good with chicken satay as well as on any noodles!

Ingredients

  • 1/2 cup peanut butter I use a natural, stir pb

Recipe for the marinade for 1 pound of Chicken Satay - when done, set aside 1/4 cup for this recipe

  • 1/4 cup soy sauce
  • 1/8 cup maple syrup
  • 1/4 teaspoon chili powder
  • 2 teaspoons lime juice
  • 1 teaspoon fish sauce
  • 1/4 teaspoon ginger paste (equiv to 1/8 teaspoon ginger powder)
  • 1/4 teaspoon garlic paste (equiv. to 1 - 2 cloves garlic)
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon coriander

The rest of the ingredients

  • 3/4 cup coconut milk
  • 1/2 teaspoon garlic paste
  • 1/2 teaspoon ginger paste

Instructions

  • In a mixing bowl, combine soy sauce, maple syrup, chili powder, lime, fish sauce, ginger paste, garlic paste, onion powder, cumin and coriander. Whisk until combined. Take out 1/4 cup.
    1/4 cup soy sauce, 1/8 cup maple syrup, 1/4 teaspoon chili powder, 2 teaspoons lime juice, 1 teaspoon fish sauce, 1/4 teaspoon ginger paste, 1/4 teaspoon garlic paste, 1/4 teaspoon onion powder, 1/4 teaspoon cumin, 1/4 teaspoon coriander
  • In a sauce pan add peanut butter, 1/4 cup marinade, coconut milk, and .5 teaspoon each of garlic paste and ginger paste. Heat on medium and stir until combined and heated.
    1/2 cup peanut butter, 3/4 cup coconut milk, 1/2 teaspoon garlic paste, 1/2 teaspoon ginger paste
  • Drizzle over some chicken satay.

Notes

Since this peanut sauce usually goes with chicken satay, make the marinade, take out 1/4 cup for the sauce and marinate the chicken tenders in the rest.
Helpful tips
  • I'm assuming you will make chicken satay when you make this sauce. So that means you will make the marinade at the same time.
  • I mention this because when you make the marinade make sure you set aside 1/4 cup for this sauce.
  • If you reheat this sauce, do NOT heat it in a microwave, instead heat it on the stove on medium low heat.
