This delish chicken meal is baked in foil and so fun to eat!

Ingredients

  • 1 large Cornish hen or 4 chicken leg quarters
  • 10 baby potatoes cut in chunks
  • 2 onions small, chopped
  • 10 ounces portobello mushrooms baby bellas, sliced
  • 14 ounces cream of mushroom soup
  • 1/4 teaspoon Salt
  • 1/16 teaspoon Pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon dried dill
  • 1 teaspoon Garlic powder

Instructions

  1. Preheat oven to 350 degrees F
  2. Cut up the hen in 4 pieces
  3. Cut 4 - 8 pieces of heavy duty foil
  4. Chop up potatoes, onions and slice mushrooms
  5. Open can of cream of mushroom soup
  6. In a medium bowl, combine potatoes, onions and mushrooms
  7. Add soup, salt, pepper and spices
  8. Mix thoroughly
  9. Place a piece meat on the middle of the each piece of foil
  10. Sprinkle garlic powder on hen
  11. Put a few tablespoons of soup mixture on hen
  12. Sprinkle more dried parsley onto soup mixture
  13. Draw the sides of the foil up into a bundle
  14. Place on jelly roll pan
  15. Place pan in oven
  16. Bake for 50 minutes
  17. Be careful opening foil packet to check if done
  18. Eat in foil
  19. Or plate it
  20. Grab a fork and spoon (for the juices)
  21. Eat
  22. Enjoy
