Helpful tips
  • You can either use regular rum like I did in this cocktail, or coconut rum. I've made it both ways. I tend to add coconut rum in the summer and regular rum the rest of the year. Make it both ways to see which you prefer.
  • I have mentioned this before, but even though the little cans of pineapple juice cost more than the big can, I buy them because unless I'm having a party, I won't use the whole can and I hate wasting the juice.
  • I like to garnish this with pineapple wedges. If you can't find fresh pineapple, you can use chunks. I buy the plastic containers of fresh cut up fruit and it works fine.
  • I also like to stick colorful drink umbrellas in the cocktail. It makes for a fun, festive drink.
  • This cocktail is usually served in either a tulip glass or hurricane glass but you can use whatever you want.
  • Some people further sweeten this tropical cocktail with a dash of simple syrup, but I find it not necessary as two of the ingredients - pineapple juice and creme of coconut - are already sweet.
