Easy Chicken Stir Fry
Easy chicken stir fry is a simple yet flavorful dish that can be cooked up in no time. Made with just a few ingredients and some basic cooking skills, this delicious meal makes for a great lunch or dinner option. It’s especially great for busy people who don’t have much time to cook because the whole process can be completed in less than 30 minutes.
Stir fry is one of my favorite ways to eat boneless chicken thighs. There are lots of chunky vegetables combined with the chicken which means you can either eat it as is or spooned over rice or noodles.
There aren’t any complicated methods concerning this recipe but that is not to say that it doesn’t have a delicate flavor balance of a sauce with herbs, spices, and ginger! This chicken stir fry recipe is super simple to make.
I don’t have a wok, what do I do?
I absolutely LOVE my wok(s). They are cast iron, they cooks food quickly and look nice on the table. If you don’t have a wok, not to worry, you can use either one or two big sauté pans.
But just know it won’t look as cool as my wok.

Helpful tips
- Even though I use two woks, you can either use two sauté pans or if you really want, you can just use one pan and transfer the vegetables out of the pan and add them to the chicken once it’s done.
- I use two woks so I can cook everything at the same time so this stir fry chicken can be on your table that much quicker. The timing in the recipe card is for if you don’t cook it at the same time or just use one pan.
- You can use chicken breasts if you prefer them over thighs.
- Make sure to trim off any excess fat off of the chicken.
- You can adjust the spices to your liking.
- Want more vegetables, you can add broccoli, carrots, sugar snap peas, green beans, or snow peas.
How to make easy chicken stir fry
Pre-step
Gather your sauté pans or wok. Cut the chicken in bit sized chunks and set aside.
Step one
Gather the ingredients – onions, red bell pepper, and mushrooms.
Step two
Cut the veggies in chunks. (A)
Step three
Heat the wok on medium and once that heats up, add the oil. And once that heats up, add the onion and pepper and sauté for 15 minutes.
Add mushrooms garlic, ginger and sauté for an additional 5 minutes. (B)
Step four
Heat another wok or sauté pan on medium and gather the ingredients for the stir fry sauce: soy sauce, maple syrup, chicken broth, cumin, chipotle powder, basil, and garlic powder. (C)
Step five
In a mixing bowl, add the sauce ingredients and whisk until combined.
Step six
Heat wok on medium and add oil and once that heats up, add the chicken and sauté for 6 minutes, stirring every so often. Add the sauce to the chicken and cook for another 2 minutes. (D)
Step seven
Transfer chicken and sauce to veggies and stir.

Now, I spoon the simple stir fry chicken into two bowls and get ready to serve it to Christopher and me.

Easy Chicken Stir Fry
Ingredients
- 2 tablespoons sesame oil
- 2 onions medium, chopped
- 2 red bell peppers sliced and chopped in chunks
- 10 ounces portobello mushrooms package, sliced
- 1/4 teaspoon salt
- 3 teaspoons garlic paste
- 1 inch ginger sliced
- 1 tablespoon sesame oil
- 1.5 pounds chicken thighs of boneless, skinless, chopped to bite size chunks
Sauce
- 1 teaspoon dried basil
- 1/4 cup soy sauce
- 2 tablespoons maple syrup
- 1/2 cup chicken broth
- 1 teaspoon cumin
- 1/8 teaspoon chipotle powder or more
- 1/2 teaspoon garlic powder
Instructions
- Heat a wok or sauté pan on medium high heat. Once it’s heated up and sesame oil and let it heat up for 30 seconds2 tablespoons sesame oil
- Add onions and bell peppers and sauté for 15 minutes. Add mushrooms, garlic, salt, and ginger and sauté for an additional 5 minutes. Take of heat and set aside2 onions, 2 red bell peppers, 10 ounces portobello mushrooms, 3 teaspoons garlic paste, 1 inch ginger, 1/4 teaspoon salt
- Heat another wok or sauté pan on medium and add sesame oil.1 tablespoon sesame oil
- Add chicken and sauté for 6 minutes, stirring every minute.1.5 pounds chicken thighs
- Make sauce as the chicken is cooking: Get your mixing bowl and add soy sauce, maple syrup, chicken broth, basil, cumin, garlic powder and chipotle powder – whisk to combine.1 teaspoon dried basil, 1/4 cup soy sauce, 2 tablespoons maple syrup, 1/2 cup chicken broth, 1 teaspoon cumin, 1/2 teaspoon garlic powder, 1/8 teaspoon chipotle powder
- Add sauce to chicken and cook it for 2 more minutes more (so the chicken cooks 8 minutes all together).
- Spoon into bowls
- Serve
- Eat
- Enjoy
