My friend Robin’s awesome healthy avocado mayonnaise recipe is both pretty and delicious! You can slather it on bread, dollop it in salad and eat it by the spoonful!
This is my friend Robin’s awesome healthy avocado mayonnaise recipe. All I can say is WOW! Not WoW as in World of Warcraft, which is how I know Robin. But Wow as in amazingly awesome!
One day, Robin messaged me in game and asked if I had ever tried this mayonnaise. I replied in the negative and she offered to give me her recipe. I, of course, love new and exciting recipes so I humbly accepted her offer and you know what? I scored!! SCORED, I tell you!
This is so delicious that, not only have I eaten it all since I made it, but I’m plotting to make more! Here’s the funny part: it’s intended to put on sandwiches or dollop on salads and such, but lil’ Laineey ate it right out of the jars. Yup. And then I took my finger, swiped out the avocado mayo residue and stuck that finger in my mouth over and over until the jar was as clean as it was going to get without washing it.
Are you wondering how much of this mayo Christopher got?
Is it your business? Why are you harassing me?
I will tell you though. He got a taste. It was a good teaspoon full so don’t you feel sorry for him, he isn’t going hungry!
On to the recipe of this delicious and healthy avocado mayonnaise:
I mentioned the online game, World of Warcraft. Most people are surprised when they find out that I’m a gamer. It’s my age. I think when people think of gamers, they picture young men, living in their parents’ dark basement, playing endlessly – wearing diapers so they don’t have to leave their computer for the necessities. (Did you ever see the South Park episode about WoW? I don’t watch the show but I did watch a YouTube video of that episode. Very funny!)
I’ve been a gamer my whole life. I have always been good at video games and ever since I picked up the controller of an Atari game, I’ve been hooked. Some of the games that came with the Atari console had plastic overlays that you stuck to the television to alter their appearance and change the scene! Haha! No doubt, by today’s standards the games were rudimentary, but at the time they were revolutionary. I’m sure there are peeps reading this who remember the Atari platform.
So that was the beginning of my love for games. Ron, one of my best friends in college, and I used to go to the arcade at the mall and play the game “Mappy.” We’d be there for over an hour, all on a quarter. Some poor person would come over and put his quarter on the machine to signify he was next in line to play and Ron and I would have to tell the bloke that he had a long wait. What I really wanted to do was cackle my head off after we said it, but that would have been just plain rude.
How to make avocado mayonnaise
This recipe contains avocado, mayo, lime juice, onion powder, chipotle powder, salt and pepper.
That’s it. And boy is it easy to make!
Here’s another photo of the ingredients because I’m so inspired by this recipe (and it’s a different view).
First up, I get a medium mixing bowl.
I cut the avocado in half and cut both halves vertically and horizontally so they are in chunks.
I take a tablespoon and scoop out the avocado and place it in the bowl. I then take the back of the spoon and mash the avocado.
Lookie loo at that green goo!
I cut the lime in half and squeeze out 1 teaspoon of juice. I add it to the avocado.
Next, I put in the rest of the ingredients: the mayo, chipotle, onion powder, salt and pepper.
I take my spatula and mix it all up. Taste it at this point and add more chipotle if you want a more spicy mayonnaise.
I have two cute little jars that my brother in law gave me and I scoop the green goodness into them.
And now, all that is left is to hide these jars in the fridge so Christopher can’t see them. Oops, I mean, all that’s left is to serve it on a sandwich. Or eat it out of the jar!
I hope you enjoyed this recipe! I also hope you make it because it’s so delicious!
Feel free to Pin any photo to Pinterest or Yum the recipe to Yummly. And hey, leave me a comment that I can share with my friend, Robin, because you know you want to.
