Pork Tostadas

Have leftover pulled pork but don’t feel like making another sandwich with the delicious meat? Well, I have the solution for you. Make this easy and delicious pork tostadas recipe. You’re welcome.

Just imagine juicy, delicious shredded pork heaped on a crunchy tortilla that is also topped with beans, cheese, lettuce, tomatoes and drizzled crema! Now imagine grabbing your fork and knife, cutting into this delicious pork pyramid, taking a bite and realizing that the flavor of this tostada will cause a party in your mouth.

Helpful tips

  • You can make the pulled pork either the same day or even days before. The meat also freezes well.
  • If I plan to use the meat from the freezer, I take it out the day before and let it defrost in the fridge overnight.
  • I prefer flour over corn tortillas but use whatever you prefer.
  • Get away from the conventional cooking spray and get a healthier version like olive oil spray. You’ll be happy you did.
  • When you bake the tortillas, I recommend standing at the oven and checking through the window to make sure they don’t get too brown.
  • The tortillas may puff up or bubble, but don’t worry about it because once you start putting on the layers, they will flatten out.

Ingredients

  • Flour tortillas – or corn if you prefer.
  • Refried beans – I use black beans in this recipe but feel free to use pinto beans.
  • Pulled pork – you can also use carnitas, sliced pork tenderloin, sliced pork shoulder, shredded chicken or beef.
  • Shredded cheese – Mexican blend.
  • Shredded lettuce – I used butter lettuce but you can use shredded romaine or iceberg.
  • Tomato – I use organic, vine-ripened.
  • Crema – homemade is best but if you don’t want to make it or have the time to make it, use store bought. A good alternative is sour cream.
  • Guacamole – Optional but oh-so-yummy!

Other addons that go well with tostadas

  • Shredded cabbage
  • Radishes
  • Fresh lime juice
  • Chipotle powder
  • Jalapeńo
  • Chili powder
  • Sliced avocado
  • Fresh cilantro
  • Salsa

How to make pork tostadas

Pre-step

Preheat the oven to 375 degrees Fahrenheit and get a jelly roll pan and olive oil spray.

If you are making more than a few tostadas, use a few jelly roll pans or crisp them in batches.

Step one

Separate the tortillas and place as many as you like on the pan. Spray some olive oil on the tortillas and use your fingers to spread it around to cover the tortillas. (A)

Step two

Bake for 5 minutes, flip and cover the other side with olive oil and bake for another 3 – 5 minutes. Notice the tortilla in the front has a bubble. 🙂 (B)

Step three

As the tortillas are baking, heat the black refried beans, heat the pulled pork, cut the tomato in chunks and rip up the lettuce. (C)

Smear beans over the crispy tortillas. (D)

Step five

Add pulled pork on the beans (E) and sprinkle shredded Mexican cheese over the pork. (F)

Add lettuce (G) and then the tomato. (H)

Step seven

This is optional but you’re going to love it. Dribble crema over the tomatoes.

Pork Tostadas

Ingredients

  • 4 flour tortillas (or corn – use as many as you like)
  • olive oil spray
  • 2 cups refried beans (pinto or black)
  • 2 cups pulled pork (or as much as you like)
  • .25 cup shredded Mexican cheese
  • 1 cup shredded lettuce
  • 1 cup tomato (chopped)
  • 4 tablespoons crema (optional)

Instructions

  • Preheat oven to 375 F.
  • Put tortillas on the jelly roll pan and spray olive oil on them and take your fingers and spread it around the tortilla. Bake for 5 minutes.

  • Flip and spray more oil and spread it on the tortillas. Bake for 3 – 5 minutes. Stand at the oven and check after 3 minutes to make sure they aren't getting too browned.

  • Spread refried beans on the tortillas.
    2 cups refried beans
  • Add pork, cheese, lettuce, tomatoes and crema if using it.
    2 cups pulled pork, .25 cup shredded Mexican cheese, 1 cup shredded lettuce, 1 cup tomato, 4 tablespoons crema
  • Add more pork if you want to be like me.
  • Eat
