Lemon Meringue Cocktail

This light and frothy lemon meringue cocktail tastes like dessert and is beyond easy to make. Just add caramel vodka, limoncello, simple syrup, light cream, and mix into the perfect cocktail!

My grandmother made the best pies. Her crust was out of this world – flaky, buttery, and so delicious. Although her apple pie was my favorite, my second favorite was her lemon meringue pie.

I wanted to make a cocktail that tastes like her pie, minus the crust. I think I nailed it.

Helpful tips

  • Here’s a small warning: since I’m combining fresh lemon juice with a dairy product, this cocktail will curdle a little. So don’t let it bother you and please, don’t let it deter you from trying this cocktail. Stirring will help with the curdling.
  • If you have a problem drinking dairy products, you can substitute any dairy alternative and it will work great. Just know that it may also curdle just a tad.
  • Although I use caramel vodka, you can substitute it with vanilla vodka, whipped vodka, or plain vodka if you like.
  • I like using regular limoncello, but crema di limoncello will work too.
  • I choose not to garnish the rim of the glass but if you like you can dip your finger in simple syrup, then roll the rim of the glass in crushed graham cracker crumbs.
  • In the past, I’ve made this cocktail with raw egg whites, and although it thickens the cocktail, I prefer it without them.
  • Wash your citrus before juicing. Here’s how: Either squirt some natural, unscented hand soap in your hands and rub the skin of the citrus then rinse under cool or cold water. OR you can get this vegetable/fruit cloth that has a rough side and smooth side. Run cool water over the fruit and rub the skin thoroughly with the coarse side of the cloth. Rinse again before juicing.
  • You can serve this cocktail in different glasses. Here are good choices: classic martini glass, bowl style martini glass, coupe glass, or even a smaller classic margarita glass.

How to make the lemon meringue cocktail

Pre-step

Get a cocktail shaker and fill it halfway with ice. Also get a measuring glass, citrus squeezer, and glassware.

After measuring out the ingredients, add to the shaker.

Step one

Gather the ingredients – limoncello, caramel vodka, fresh lemon, simple syrup, and half & half or light cream. (A)

Measure 4 ounces of caramel vodka. (B)

Measure out 2 ounces of limoncello. (C)

Step four

Measure out 1 ounce of fresh lemon juice. (D)

Measure out 1/2 ounce of simple syrup. (E)

Measure out 3 ounces of cream. (F)

Step seven

Place the lid on the cocktail shaker and shake vigorously for 15 seconds. Strain, pour, and divide the liquid between the two glasses.

Ingredients

  • 4 ounces kissed caramel vodka
  • 2 ounces limoncello

  • 1/2 ounce simple syrup
  • 3 ounces light cream

Instructions

  • Fill cocktail shaker halfway with ice.

  • Cap the shaker and shake for 15 seconds. Pour, divide, and strain the liquid between the two glasses. (It may curdle a little but don't worry that's normal when you add dairy to anything with citrus in it.)
