Dark and Stormy Cocktail

The dark and stormy drink is one of our favorite cozy cocktails! This velvety smooth drink has a hint of sweetness from dark rum, an invigorating burst of flavor from ginger beer, and tart citrus notes from lime. Whether you’re cozying up at home or making drinks for friends, this tasty libation will surely be a hit.

If you love to drink Moscow mules, and you like dark rum, you are going to really enjoy this dark and stormy drink.

With only three ingredients, this cocktail is easy to make.

I remember making my first dark and stormy at the restaurant where I worked. One of the patrons had asked if I knew how to make one. I said that I didn’t, but I would be happy to look it up and attempt one if he were game. He said, “Sure!” So I grabbed the bartender’s trusty book of popular cocktail recipes and thought, ‘Okay, I got this.’

But I kind of botched it.

We had the rum, we had the lime but the restaurant didn’t have ginger beer. I thought, ‘Okay, we don’t have ginger beer, but we do have ginger ale.’

It’s not the same.

If you’ve ever had ginger beer before, then you know what I mean. If you haven’t and you do a side by side taste test, you’ll see that ginger ale is mild and ginger beer is spicy and strong tasting.

And my patron? Well, he drank the one I made him, but he didn’t order another one.

But I have since perfected this drink and made it correctly since that day.

History of the dark and stormy

There is a very interesting article that explains the history. But suffice to say that it is the unofficial national drink of Bermuda, and the company – Gosling Brothers ltd, has two trademarks for the name “Dark ‘N Stormy “. Give it a read, it’s a quick and fun one.

Tips
  • I’ve seen different recipes for this drink and made it with and without lime juice. I’ve also made it with the ginger beer first and the float of the rum and although I love a good layered drink, I don’t like to drink the dark and stormy this way because the rum is very taste-forward. Try this recipe first before the other way to see what you think.
  • There are plenty of dark rums out there, but my go-to choice is the Goslings brand.
  • There are lots of ginger brand brands in the market, but I do also prefer the Goslings brand. It’s a great spicy ginger beer.
  • I’ve always made this cocktail in a tall glass like the Collins glass but you can also make it in a highball glass, a double old-fashioned glass, or any glass you like.
  • Wash the limes before juicing or adding to the cocktail as garnish. Here is how: I have this cloth that is rough on one side and smooth on the other. Hold the lime in your hand and run cold water over it. Take the cloth and rub the skin with the coarse side of the cloth. Rinse well.

How to make a dark and stormy cocktail

Pre-step

You will be building this cocktail in the glass.

Get your glassware and fill it with ice. Also, get a measuring glass and a citrus squeezer.

After measuring out the ingredients, add them to the glass.

Step one

Gather the ingredients – Goslings Black Seal rum, ginger beer, and lime.

Step two

Measure 2 ounces of dark rum per cocktail. (So, 4 ounces total.) (A) Add to glass. (B)

Measure out 4 ounces of rum and pour it into the ice-filled glasses

Step three

Measure 1/2 ounce of lime juice per cocktail. (So, 1 ounce total.) (B) Add it to the glass. (C)

Measure out 1 ounce of fresh squeezed lime and pour it into the ice-filled glasses

Step four

No need to measure out the ginger beer as you’ll just pour it into the glass, but mine ended up being around 4 – 5 ounces in each glass.

Don’t be afraid to add more ice.

Step five

Slice two thin wedges out of the lime. Pick up one of the lime wedges and squeeze the juice into one of the cocktails and drop the lime into the drink. Repeat with the second cocktail.

Ingredients

  • 4 ounces Goslings Black Seal Dark Rum (divided – 2 ounces per drink)
  • 8 ounces Goslings Ginger Beer (this is approximate as you will just pour it into each glass without measuring.)
  • 1 ounce lime juice (divided – 1/2 ounce per drink)

Garnish

  • 2 wedges lime (squeezed into cocktail and then placed in the glass)

Instructions

  • Fill the tall glasses 3/4 full of ice.
  • Add rum, lime, and ginger beer.
    4 ounces Goslings Black Seal Dark Rum, 8 ounces Goslings Ginger Beer, 1 ounce lime juice
  • Adjust ice cubes. Squeeze lime in glass and place in as well. Stir if you want.
  • Sip
  • Smile
