Cranberry Granola
This cranberry granola recipe is so fabulous that you are going to want to snack on it all day long. You’ll have to hide it away so you don’t eat it all in one day! But that’s not all, it’s a perfect gift around the holidays.
The tangy taste of cranberries paired with the crunchy texture of lots of nuts and chocolate bits is what makes this granola fabulous.
I wish I could eat granola every day. I go through weeks where I do eat it one day after another, but even though it has tons of proteins in it, it’s also high caloric. But a few handfuls every once in a while is perfectly acceptable.

How to make cranberry granola
Pre-step
Pre-heat your oven to 325 degrees Fahrenheit. Get a large mixing bowl and line a jelly roll pan with parchment sheets.
Step one
Gather the ingredients – pistachios, cashews, almonds, walnuts, sunflower seeds, pecans, shredded coconut and oats.
Step two
Add all the above ingredients to a mixing bowl.
Step three
Add maple syrup, olive oil and salt and mix it all together. I use a wonderful rubber spatula.
Step four
Transfer the oat mixture to the jelly roll pan and spread it out evenly.
Step five
Bake the granola for 20 minutes.
Step six
Take the pan out of the oven and flip the granola and bake for an additional 10 minutes.
Step seven
Measure out the cranberries and chocolate bits.
Step seven
Wait 8 – 10 minutes before adding the chocolate bits.
Here they are poured on the granola.
Step eight
Take a metal spatula and mix the chocolate chips through the granola. You want to let half of the chips melt and rest of them to stay whole.
Step nine
Time to add the cranberries.
You can see the clumps of chocolate in the granola. Doesn’t it look fabulous?
Step ten
Mix the cranberries through the granola.
I wait for it cool and let the chocolate bits harden. By this time, I’m a drooling mass of anticipation. I can’t WAIT to eat it!
All you need to do to prepare the granola for gifting is jar it up, stick a bow on it and the recipients will love you forever.

Cranberry Granola
Ingredients
- 3 cups oats (old fashioned)
- 1/2 cup shredded unsweetened coconut
- 1/2 cup pistachios
- 1/2 cup cashews
- 1/2 cup almonds
- 1/2 cup walnuts (pieces)
- 1/2 cup sunflower seeds
- 1/2 cup pecans (pieces)
- 1/2 teaspoon salt
- 1/4 cup olive oil (or oil of your choice)
- 1/4 cup maple syrup
- 2 teaspoons vanilla
- 1 cup dried cranberries
- 1 cup chocolate chips (big, I use Ghirardelli 60%)
Instructions
- Pre-heat oven 325 degrees Fahrenheit and line a jelly roll pan with parchment paper.
- In a large bowl, mix oatmeal, coconut, salt, all the nuts and stir to combine3 cups oats, 1/2 cup shredded unsweetened coconut, 1/2 cup pistachios, 1/2 cup cashews, 1/2 cup almonds, 1/2 cup walnuts, 1/2 cup sunflower seeds, 1/2 teaspoon salt, 1/2 cup pecans
- Pour maple syrup vanilla and olive oil on the oatmeal mixture and mix with rubber spatula.1/4 cup olive oil, 1/4 cup maple syrup, 2 teaspoons vanilla
- Pour and spread on pan. Bake for 20 minutes.
- Take out and flip granola over and bake for an additional 10 minutes.
- Wait up to 10 minutes and add chocolate chips and flip the granola around. Some of the chocolate will melt and others will stay whole.1 cup chocolate chips
- Add cranberries and flip around.1 cup dried cranberries
- Let cool until chocolate has hardened.
- Jar and gift some
- Enjoy the rest
