Baked Brie in Puff Pastry

Baked brie in puff pastry is a holiday staple for a reason! This effortlessly scrumptious appetizer recipe requires minimal prep and pairs wonderfully with crackers, apple slices, and fresh vegetables.

This recipe made with brie cheese is easy to make and so delicious you will glory in the flavors in every mouthful. You can serve this beautiful appetizer on crackers, bread, pita chips and even by the forkful.

Helpful tips

  • Take the sheet of puff pastry dough out of the freezer around 40 minutes before you begin the recipe, so it can thaw. I leave it on the counter.
  • At around 20 minutes, check the pastry to see if you can unfold it without breaking it and when it’s ready, do so.
  • Use a rolling pin to roll out the pastry a little. This will make it slightly bigger and help get rid of the folds. (It doesn’t always get rid of them, but it will smooth the dough out.)
  • Use an egg wash if you want the pastry to turn a shiny golden brown color. Without the egg wash, the finished pastry won’t have that golden glow.
  • This recipe calls for pecans but use whichever nut you prefer or none at all.
  • I use prune spread because we love it so, but you can use other jams instead. Here are great additions – raspberry jam, apricot, peach, strawberry jam, and cranberry sauce.
  • Sometimes I dip fresh fruit in the baked brie. Here are my favorites – apple slices, strawberries, and pitted cherries.

How to make this brie appetizer

Pre-pre-step

Take the sheet of puff pastry out of the freezer at least 40 minutes before you are going to use it.

After it thaws, use a rolling pin to get rid of the fold lines and make it bigger. (It’s okay if they don’t totally disappear as you can see in the photo below.)

Pre-step

Preheat the oven to 375 degrees Fahrenheit and line a jelly roll pan or baking sheet with parchment paper.

Step one

Gather the ingredients – brie, prune spread or some other jam, puff pastry, and pecans. (A)

Step two

Place the thawed puff pastry on the jelly roll pan. Take the paper off the brie and place it on the middle of the pastry. (B)

Step three

Take a knife and slather as much jam or spread you want on the brie. (C)

Step four

Sprinkle as many pecans you want on the spread. (D)

Wrap it up

Step five

Take edges of the puff pastry and wrap the brie into it. (E)

Step six

Crack an egg into a mixing bowl and add a few tablespoons of milk. Whisk until combined. Take a brush and distribute the egg wash over the pastry. (F)

You will have extra egg wash that you can toss or use to make a little omelette. 😉

Step seven

Bake for 25 – 30 minutes. As every oven is different, check the brie after 25 minutes to gauge how much longer you need to bake it. It should be a nice golden brown.

Gather maple syrup, more pecans and some crackers!

Sprinkle the nuts on the baked brie and pour maple syrup on top. You could also dribble honey on it instead of the syrup.

It’s a party

I cut the brie in half and separate it a little so we can see all the melted goodness.

Ingredients

  • 1 sheet puff pastry (defrosted – and rolled out)
  • 8 ounces brie wheel
  • 4 tablespoons prune spread (or any jam you like)
  • 3 tablespoons pecans (or any nut
  • 1 egg (plus 2 tablespoons milk for egg wash – this is optional)
  • 3 tablespoons maple syrup
  • 1 tablespoon pecans (optional topping)

Instructions

  • Take puff pastry sheet out of freezer at least 40 minutes before starting. When puff pastry has defrosted, either take a rolling pin to smooth it out or leave as is.

  • Preheat oven to 375 F. Cover a small jelly roll pan with parchment paper.
  • Lay puff pastry flat on the jelly roll pan.
  • Unwrap wheel of brie and place it in the middle of the pastry.
    8 ounces brie wheel
  • Slather jam on brie and sprinkle pecans on top. Pull ends of pastry up over the brie and seal it as best you can.
    4 tablespoons prune spread, 3 tablespoons pecans
  • For the egg wash, crack egg in bowl, add two tablespoons of milk and whisk until combined.

  • Take a pastry brush and paint the egg on the pastry.
  • Bake for 25 – 30 minutes.
  • Place brie on serving dish and sprinkle more pecans on top. Pour as much maple syrup on top.
    1 tablespoon pecans, 3 tablespoons maple syrup
  • Gather crackers or bread for the brie and cut the cheese in half.
  • Eat
  • Smile

    1. I hardly ever have it leftover Ting, but the one time I did, I placed it on a baking sheet, preheated the oven to 325 and heated for 15 – 20 minutes. Just know the puff pastry may get a bit soggy. Good luck!
